Fish Tacos (Facos) x Jalapeno Cheese Sauce

Ingredients

2 pieces white fish such as barramundi

1 lemon rind

2 packets small white tortillas

1 corn on the cob

1 Bottle of Gold Gourmet Foods Jalapeño Cheese Sauce

3 tbsp butter

½ tsp paprika

1 punnet cherry tomatoes

½ small red onion

½ bunch coriander

1 jalapeno

½ pineapple

1 tbsp olive oil

2 limes juiced

Salt and black pepper to taste

Radish to garnish

Instructions

  1. Heat the BBQ griddle plate

  2. Combine softened butter, salt and paprika, lather half into the entirety of the corn then place it on the BBQ continuously turning and basting until all the paprika butter has been used and corn is charred – set aside

  3. Season fish with olive oil, salt, pepper and lemon rind, get a frying pan hot on medium-high heat and pan fry 3-4 minutes on the first side, 1-2 minutes on the second side - rest 

  4. Make a fresh salsa by finely dicing the cherry tomatoes, red onions, coriander, jalapeno and pineapple, toss through olive oil, salt, pepper and lime juice

  5. To construct the tacos, first place the salsa down the centre in a line, followed by the fish pieces, remove charred corn from the cob with a knife and sprinkle on top. Squeeze desired amount of jalapeno cheese sauce on each and garnish with finely sliced radish and an extra squeeze of lime!
