Eggs Benedict with Hollandaise Sauce — Without the Drama

•       4 eggs for poaching

•       White vinegar for poaching water

•       Fresh chives to finish

 

Method

1.    Lightly dust ham slices with Dawn of the Dust Mexican Rub. Warm in a dry frying pan for 1 to 2 minutes. The rub adds a subtle cumin and citrus warmth that cuts through the richness of the hollandaise beautifully.

2.    Bring a deep pan of water to a gentle simmer. Add a splash of white vinegar. Crack each egg into a small cup, create a gentle whirlpool, and slide eggs in one at a time. Poach for 3 minutes for a runny yolk.

3.    Toast and halve croissants or sourdough. Layer with seasoned ham, then top with a poached egg.

5.    Finish with fresh chives and cracked pepper.

 

Croissant vs Sourdough

Both work well. A croissant adds buttery richness and structural integrity. Sourdough gives more tang against the hollandaise. Make each version on different mornings and decide which you prefer.
