Ingredients (Makes 6 to 8 Fritters)
• 2 cups corn kernels, fresh or frozen
• 1 cup plain flour
• 2 eggs
• 1/2 cup milk
• 1 jalapeno, finely diced
• 50g queso fresco or feta, crumbled
• 1/2 tsp salt
• Olive oil for frying
• 2 poached eggs to serve
• Sliced avocado
• Baby coriander

Method
1. Whisk flour, eggs and milk into a smooth batter. Fold through corn, jalapeno, queso fresco and salt.
2. Heat a splash of oil in a non-stick pan over medium heat. Drop heaped tablespoons of batter and press lightly to flatten.
3. Cook 3 to 4 minutes each side until golden and cooked through. Work in batches.
4. To plate: smear Chipotle Mayo across the plate first. Stack fritters, add poached egg, avocado and fresh coriander. Finish with another drizzle of Chipotle Mayo over the top.
