BBQ Bacon & Egg Banh Mi

Ingredients (Serves 2)

•       4 rashers thick-cut bacon

•       2 eggs, fried

•       Sliced gouda cheese

•       Fresh chives, roughly chopped

Method

1.    Heat a pan over medium-high. Cook bacon until it starts to crisp. In the final minute, brush each rasher with Hickory Smoked BBQ Sauce and allow it to caramelise on both sides. The glaze should be sticky, not wet.

2.    In the same pan, fry eggs until whites are set and yolks remain runny.
